Keto Butter Biscuits

Every morning I like to have a real breakfast. Unfortunately for me, I hate eggs and keto relies HEAVILY on eggs. I've tried to like them so many times. It's just not happening and it's a shame I realize because they're so good for energy. On keto, most of my usual breakfast foods are out- cinnamon toast, bagels, cake, brownies;-P (no lie). But I can have as much meat as I want. Bacon is great and I love it but it's a bit messy and time consuming for breakfast. Sausage patties are good because I can just throw them in the pan and they brown easily in 10 minutes. Plus, they're not as expensive as bacon and Charlie likes them so I can make one for him as well. But plain 'ol sausage patties for breakfast are a little threadbare. So I'll make Carbquik biscuits and pair it with my morning sausage and I'm good! You can cut a biscuit in half and have a sausage biscuit! Only 1g net carb per biscuit!


In case you haven't heard of Carbquik it's the non-strict keto dieters dream. It's a flour that only has 2g net carbs per 1/3 cup whereas regular flour has 27.5g of carbs!!!! I say non-strict keto because (in case you're new to keto) some people do net carbs, some people don't. I do. I couldn't do keto without my nets!! People who do nets don't count fiber or sugar ALCOHOLS in their carb count because allegedly they aren't absorbed in digestion. There's some debate about this. As a compromise some people count half of the carbs from fiber and sugar alcohols. Strict keto people also don't eat processed foods.
If you're like me and you do non-strict keto these biscuits hit the breakfast SPOT! Get your Carbquik mix here. You can make all kinds of things with carbquik. You name it. Pizza crust, cookies, pancakes, bread. It's pretty versatile. But it does all come out having a biscuity flavor which isn't so bad. Like I said before, these biscuits are only 1g net of carbs per biscuit. Here's how I make them.

Makes 12
1 carbs each

2 cups Carbquik
1/2 cup heavy cream
1/8 cup water
1 tsp baking powder
1 tsp salt (optional)

Instructions:

-Preheat oven to 375F. Place dry mix, heavy cream, baking powder, salt and water in mixer bowl. On low speed, slowly add liquid until dough forms.
-Roll dough 1/2" inch thick
-Cut 3 inch circles with tip of knife, biscuit cutter or top of a glass
-Place on greased baking sheet having each of the biscuits touching each other (This helps the biscuits to rise)
-Place on top shelf. (Every oven is different. This is just what I did.)
-Bake for 15 minutes or until golden. Brush with butter or oil (optional).
