Amazing Microwaved Desserts: 5 Minute Fudge

June 2, 2015

I currently working on a difficult pattern that's taking some time as well as a lot of forced motivation on my part so as I'm working through that I wanted to share something I made over the weekend. 5 Minute Microwaved Fudge! I originally got this idea from a chocolate version on About.com food. I'll post the video below but here's how I made a peanut butter version. What's so amazing about this recipe is that you don't have to boil anything or use a candy thermometer. Just a plain ol' microwave will do.

First take 3 cups peanut butter chips
Add one 14 ounce can of sweetened condensed milk. And 4 tablespoons of butter.
Microwave for 1 minute. This will not completely melt all the ingredients but it will soften them so that you can stir them together for a bit for them to fully melt them. If you over microwave you could ruin the fudge especially if you are using chocolate chips.
Add one teaspoon of vanilla extract.
Stir together until ingredients are smooth and creamy.
Line a square baking pan with foil. I used non-stick foil.
Pour in mixture.
Let set in freezer for 45 minutes.
Turn pan over to release fudge and remove foil.
Cut into 1" bars.
Then cut into 1" squares.
Voila! Use mini cupcake wrappers and arrange in a fun way.
Here's the about.com video where she used chocolate chips. She also adds 1/4 teaspoon of salt. I used salt in mine originally and it came out way to salty so I just excluded it from this recipe but maybe if you used chocolate chips instead of peanut butter chips it would need a little salt. She also poured her fudge when it had stiffened a bit. I preferred to pour mine still quite creamy. I thought it laid better in the pan that way. If yours starts to stiffen before you pour just put it back in the microwave for 30 seconds.
If you'd like to pin this, here's a nice long step by step pin to use.

@looweezThanks for the heads up. I added the word "sweetened".

@magda stamaI don't see why not. All you need to really do is make the mixture melted. Just don't burn the chips and you should be fine.
